Eggplant - Black Beauty Seeds
Black Beauty Eggplant is easy to grow and produces high yields of glossy dark purple fruits. This open-pollinated heirloom plant produces perfect fruits that ripen earlier than other varieties. This eggplant is the most popular at markets because of its great flavor and texture. Harvesting fresh eggplants from the garden taste so much better than any others you have tasted before.
Eggplant seeds can be started indoors.
Start seeds inside 8 weeks before the last frost date. Plant seeds 1/2" deep in pots with growing mix and place on a warm seedling mat or in a warm area that is 70 to 85 degrees with bright light. Eggplants are similar to tomatoes and peppers and require relatively warm temperatures to germinate and grow quickly. After 8 weeks, when the outdoor garden soil has warmed, transplant the seedlings 3' apart in full sun.
Black Beauty produces dark purple egg-shaped fruits that grow from the branches and hang down similar to peppers and tomatoes. The 2-3' tall plant will require staking or a cage for support. It's best to put the support in place when the plants are first transplanted so the roots will not be damaged later.
When watering soak the soil to a depth of at least 6" so the soil stays moist but never soggy. Mulching can help to provide uniform moisture, conserve water, and reduce weeds.
Harvest before the glossy dark skin begins fading. The eggplants can grow 4-5" long.

I had these planted in some large containers, they did well and looked quite elegant. I love the purple blooms and the pretty plans. The eggplants were a nice smaller size, and they were delicious made into eggplant parmesan!
